Leftover roast and veggies. Question: I took the crock full of leftovers out of the crockpot and put it in the fridge. Has anyone had luck with putting it *back* in the crockpot on low to reheat? If so, for how long?

Funny, I haven't tired putting leftovers back into the crockpot, but had planned to call DS2 around 2:00 and tell him to throw the roast and steamed cauliflower that we ended up not eating last night due to his pizza/wings cravings into the crockpot with about a 1/4 C of water and turn it on low... I can let you know how it turns out, but not in time for today if that was when you wanted to try it too!

Thanks, hotsaucygma. I guess we'll just heat our individual plates for tonight, but I bet the crockpot would work, too, if I was going to be home sooner than 6 hours from now.

Grilled/broiled Asian Chicken - sort of. Combining the chicken and sauce while the chicken is hot, allow the flavors marry perfectly. Their clarity remains even after the chicken has been chilled (of course you can serve the dish hot or warm if you prefer). If you like serve it atop a bed of shredded salad greens with a bit of extra dressing. We generally use white rice, steamed with a hot pepper on top. 1 1/2 pounds boneless, skinless chicken breasts (or thighs) 3 tablespoons soy sauce 1 1/2 tablespoons creamy peanut butter 1 teaspoon roasted sesame oil 1 small garlic clove, peeled A few drops of hot sauce, such as Tabasco Salt and freshly ground black pepper 1/4 teaspoon sugar or 1 Tbsp orange juice 1 tablespoon rice or white vinegar 1 cucumber sprinkle with your favorite herbs (we use dried Italian) 1. Preheat the broiler. Cut the chicken meat into 1/2 to 1-inch chunks and thread it onto skewers (if you're broiling you can forget the skewers and simply use a roasting pan). Put the skewers on a plate and drizzle with 2 tablespoons of the soy sauce. 2. In a blender, combine the remaining soy sauce with the peanut butter, sesame oil, garlic, hot sauce, salt and pepper to taste, sugar/oj and vinegar. Turn the blender on and add hot water, a teaspoon at a time, until the mixture is smooth and creamy. (You will not need more than 3 teaspoons of water.) 3. Broil the chicken, turning once or twice. Total cooking time will be 6 to 8 minutes for breasts, 10 to 12 minutes for thighs. Meanwhile, peel the cucumber, slice it in half the long way, de-seed and cut it into 1/2-inch dice. Combine in a bowl with the sauce. When the chicken is done, toss it with the sauce and cucumber. Taste and adjust seasoning if necessary, then serve hot or cold, garnished with cilantro.

Betty Crocker Complete Meals, Cheesy Beef Taco because they were $2 a box, canned veggies and crackers. It aint gourmet, but it fills 6 mouths.
